Takoyaki, meaning "grilled octopus," was invented in 1935 by street vendor Tomekichi Endo in Osaka. Inspired by Akashiyaki—a softer, egg-rich octopus dumpling from Akashi—Endo experimented by adding octopus to a wheat-flour batter, creating the crispy-on-the-outside, tender-on-the-inside balls we know today. Initially filled with beef and konjac, the switch to octopus gave rise to the modern takoyaki.
